Here’s a new idea of breakfast or a healthy snack: homemade banana bread waffles.
I simply made my banana bread recipe and baked it in my silicone waffle molds(buy them here). Within 25 minutes, a new delight was born. These waffles are even prettier than the usual banana bread slices. They can be eaten as is or sprinkled with maple syrup, nut butter or yogourt.
The recipe is vegan and therefore contains no eggs or dairy products.
Freezing
A recipe gives 8 rectangular waffles. I freeze them for two months without a problem. It is possible to thaw them in the refrigerator or to reheat them in the toaster or microwave to eat them on the spot.

Preheat the oven to 350 F. |

Place silicone waffle pans on an ovenproof baking sheet. Spray them with oil. Put aside. |

Prepare the vegan egg substitute by mixing water and ground flaxseed. Leave to rest for 2 minutes. |

In a large bowl, mash bananas with a fork. Add vanilla essence, apple sauce, coconut oil and vegan egg substitute. |

In another bowl, combine dry ingredients: flour, maple flakes, baking powder, baking soda, salt. |

Incorporate dry ingredients into moist ingredients gradually. Mix well. |

Divide the dough among the 8 waffle pans. Bake for 25 minutes at 350 F. |
