I had a sudden urge to create gourmet, high-protein and satisfying nut bars. Gluten-free, vegan, no strange powder. Inspiration always takes hold of me! Oh my… a delight! I couldn’t resist: these gluten-free, decadent, nutty and vegan energy bars are amazing.
2 large waffles or 4 bars
You choose! And just to make this recipe super pretty, I used my silicone waffle molds. The molds are available in my online shop: they’re amazing: you’ll make 8 waffles at a time(kit of 2 molds).

Preheat the oven to 350 F. |

In a bowl, combine shelled sunflower seeds, almond flour, grated unsweetened coconut, dried cranberries. Don't put the chocolate yet! |

Use the mircrowave to melt down the oil with the syrup. |

Incorporate the liquid mixture into the previously blended ingredients. Stir well. Allow to cool before adding the chocolate. |

Add the chocolate. Mix. |

Spray a drizzle of oil into two rectangles of a Reason et Gourmandise waffle mold (see out online store). |

Squeeze the mixture into the chosen mold. Crush well and compact with your hands. |

Place in the centre of the oven, at 350 F, for 20 minutes. |

When out of the oven, gently repress the mixture with the palm of your hand or a spatula to recompact. Do not unmold right away. |

Cool on the counter for about 30 minutes. |

Eats on the spot and can be stored in the refrigerator for a few days. |

You are absolutely right! I have made the precision that honey works, but I use thickened maple syrup for a vegan option.
I wanted to make these, they look good, but honey isn’t vegan.
