This vanilla cake without butter or oil is my yummy and healthy GoTo to make me delicious guilt-free desserts. I cut it into small cubes and assemble parfaits that are inspired by strawberry shortcakes. I also serve it with fruit or chocolate sauce. It’s also delicious with the pear and vanilla sauce.
I like to make a mixture of white flour and spelt flour to improve the nutritional value of the recipe. I also include Greek yogurt for more protein. A nice balance!

Preheat the oven to 350 F. |

In a bowl, combine the 2 types of flour, maple flakes and baking soda. |

Add the greek yogurt, the egg, the egg whites, the almond milk, the vanilla essence and the maple syrup. Mix well. |

Grab a 8 x 8 inches cake mold. Spray it with canola oil. Pour in the dough. |

Place in the centre of the oven at 350 F and bake for about 25 minutes or until the toothpick comes out unscathed. The cake should be about 2 inches thick. |
