Ingredients

Adjust Servings:
4 sliced ​​whole wheat bread to taste
1/3 cup (1/3 cup = 58 g) less sugar 0% fat vanilla greek yogourt
2 tbsp (2 tbsp = 30 ml) water
1 egg
1/4 tsp (1/4 tsp = 1.25 ml) artificial rum extract
1/4 tsp (1/4 tsp = 1.25 ml) almond extract
1/2 cup (1/2 cup = 56 g) almond meal (flour) Click to see recipe
2 tbsp (2 c. tbsp = 24 g) maple sugar
Optional Toppings
to taste powdered sugar
to taste sliced and grilled almonds
to taste maple syrup

Delish high protein Almond French toast that will make your day! Yummy and healthy, this recipe reminds me of almond croissants. A new way of eating French Toast.

1 slice gives you 40 % of you daily calcium intake and 10 grams of protein!

Steps

Separate the almond meal in 2 portions of 1/4 cup.

In a bowl, mix the egg, the yogourt, the water, the almond extract and the artificial rhum extract. Whisk well.

Add 1/4 cup of almond meal and the maple sugar. Mix again.

Heat a non sticking pan over as you would do so for pancakes. Spray some vegetable oil.

Spread the rest of your almond meal in a plate. You will use it to create a crust on your French Toast.
You may want to separate it in 4 portions in order to keep each tablespoon of almond powder dry.

Apply these steps 4 times (4 slices):
1- Dip the bread in the mixture on both sides for about 15 seconds. Make sure both sides are well covered.
2- Cover the wet slice of bread with almond meal on both sides.
3- Cook for abour 2 minutes on each side, until the French Toast is golden. Do not return several times.

You may serve it with roasted slices of almonds and powdered sugar. Some like to add maple syrup as well.
