Ingredients

1 1/2 cups (1 1/2 cups = 210 g) frozen mangos

1/3 cup (1/3 cup = 83 ml) pineapple juice without added sugar

1/4 cup (1/4 cup = 63 ml) water

2 tbsp (2 tbsp = 20 g) whole black chia seeds

1 tbsp (1 tbsp = 5 g) unsweetened shredded coconut

My daughter loves this homemade exotic popsicle: mango, pineapple, chia and coconut. And I don’t mind at all, because they are homemade and I can easily name all the ingredients of the recipe! Nothing chemical, no preservatives and 6 grams of sugar each.
Chia seeds and their superpower
Chia seeds contain a lot of fibre, plant omega-3, calcium and protein. Hurray! But their super power is that children love them and they get a jelly texture when they soak in a liquid. My daughter compares them a little to tapioca in bubble tea. She likes the texture in the mouth. As a bonus, it’s beautiful, right?

Place 3 pinches of unsweetened grated coconut in the bottom of each of the 6 molds. Add 1/4 of a teaspoon of water (a few drops) and stir with the tip of a knife. This will help secure the filling and prevent it from crumbling. |

Heat 1/4 cup of water for 40 seconds in the microwave. |

Place frozen mango cubes, pineapple juice and hot water in electric mixer. Blend for 2 minutes for a perfectly smooth texture. |

Add chia seeds to mixture. Stir by hand. |

Divide the mixture among 6 popsicles molds, gently pouring over the small layer of coconut. Place in the freezer and enjoy a few hours later. |
