1/4 cup (1/4 cup = 63 ml) almond milk
2 tbsp (2 tbsp = 30 ml) canola oil
1/2 cup (1/2 cup = 125 ml) unsweetened apple sauce
1/4 cup (1/4 cup = 30 g) dried cranberries sweetened with apple juice
1/3 cup (1/3 cup = 45 g) semi-sweet chocolate chips
1 tsp (1 tsp = 5 ml) vanilla extract
2/3 cup (2/3 cup = 60 g) instant oats
1 cup (1 cup = 120 g) white flour

3 pinches salt
Vegan egg substitute
1/4 cup (1/4 cup = 63 ml) water
2 tbsp (2 tbsp = 14 g) ground flax seeds

Vegan healthy chocolate and cranberry bread: happiness assured in the morning, at snack time or for dessert! A delight: not too sweet, just enough, and nutritious. I reduced my oatmeal powder and made a mixture of white flour and oatmeal.

A vegan bread?

Yes! To get there, I swapped the eggs for the vegan substitute of mixing ground flaxseed in a little water to get an egg-like jelly. See the proportions to be met in the ingredient list.

A recipe full of local foods

You can incorporate a lot of local products into this recipe: chocolate, cranberries sweetened with apple juice, maple flakes, flaxseed, apple sauce, flour and oats. I also use the aluminum-free baking powder.

A healthy recipe

How? Because this chocolate and cranberry bread contains no butter and a maximum of natural sweeteners. Sugar is sugar, but I want it as nutritious and local as possible. There is 2 tablespoons of vegetable oil in all the bread. Instead, I opted for an unsweetened apple sauce and maple flakes. Chocolate and cranberries also give a good sweet taste of course.

As a bonus, this recipe is low in calories: there are 125 calories per slice.

Steps

Preheat the oven to 350 F. Place the grill a little lower than the centre of the oven.

In a small bowl, combine water and ground flaxseed. Let it rest for at least 5 minutes. The mixture will become gelatinous and serve as an egg substitute.

In an electric blender or coffee grinder, reduce oatmeal to a thin flour.

Combine oatmeal, white flour, maple flakes, salt, baking powder, baking soda, cranberries and chocolate nuggets or pieces. Put aside.

In another bowl, combine vegetable milk, unsweetened apple sauce, canola oil (or other neutral oil), vanilla essence and egg substitute. Stir well.

Incorporate dry ingredients into moist ingredients gradually. Mix to make a smooth dough.

Place parchment paper in a rectangular bread pan or spray it with oil.

Pour the dough into the pan. Gently press the pan against the counter to drop the dough to the four corners of the pan and remove the air bubbles. If desired, place 12 pieces of chocolate on top as a decoration and guide to slice bread after baking.

Bake for about 50 to 60 minutes or until the tip of a knife comes out of the dough perfectly clean: the cooked dough will not stick to it.
Cover the bread for the first 30 minutes of baking with aluminum foil or by placing a silicone mat on the top rack, just above the bread as in the attached photo.

Allow to cool before slicing.
