Ingredients

Adjust Servings:
2 tbsp (2 tbsp = 15 g) white flour
1 tbsp (1 tbsp = 7.5 g) whole wheat flour
1/2 tsp (1/2 tsp = 2.5 ml) aluminum free baking powder Click on the ingredient to see more info
1/2 tsp (1/2 tsp = 2.5 ml) canola oil
3 tbsp (3 tbsp = 45 ml) almond milk
1/2 tsp (1/2 tsp = 2.5 ml) orange blossom water See picture in the recipe.
1 tbsp (1 tbsp = 15 ml) honey
2 tbsp (2 tbsp = 15 g) pistachios
Sauce
1 tbsp (1 tbsp = 15 ml) honey
1/2 tbsp (1/2 tbsp = 7.5 ml) water

Happiness in a mug… in 2 minutes! Celebrate breakfast, brunch or dessert with this pistachio and honey baklava-like mugcake! You may bake in a mug or a ramekin. It’s a simple 2 minutes microwave recipe!

This recipe makes you travel. It’s like combining a maple pudding with baklavas. You’ll like this cake if you enjoy moist and saucy dough. You also need to love honey and pistachios, of course. It’s a sweet treat, that’s for sure! But the whole wheat flour and the nuts give this recipe a nutritionnal boost.

The secret ingredient: Orange Blossom Water

This ingredient is the key! You need it! I purchase it in a store called Adonis. You will find it in different grocery stores that offer international products.

PREPARATION

Chop the pistachios with a knife.

In a mug or a microwave safe small container, mix the white flour, the whole wheat flour and the baking powder.

Add the milk, the oil, the honey, the orange blossom essence and half the chopped pistachios. Mix well.

SYRUP

In a small container, mix the water and the honey that will become the sauce. Heat in the microwave for 20 seconds. Mix and put aside.

BAKING

Make sure you cook the cake in phases in order to verify the dough. All ovens are not the same. You do not want to overcook the cake, The dough should be moist and you should obtain syrup at the bottom of the mug,
If you use a ramekin, the dough could spill out of the container. Place a plate underneath the container before baking. Place the ramekin on a plate before baking the pudding just in case.

PHASE 1: 30 seconds.

After baking for 30 seconds, add the rest of the chopped pistachios. You may use a fork to create small holes in the dough and tuse a knife to detach the dough from the sides of the container gently.
Pour the sauce on top. The sauce will go down the holes you made and around the dough all the way down.

PHASE 2: 20 seconds. Verify the dough.
PHASE 3: 15 seconds.
Serve!
