No-brainer Vegetarian Chili with quinoa

Ingredients

Adjust Servings:
1 can (1 can = 398 ml) tomato sauce or crushed canned tomatoes
2 1/2 cups (2 1/2 cups = 625 ml) water
1 can (1 can = 2 cups) canned kidney beans
1/2 cup (1/2 cup = 90 g) quinoa
1/2 bag (1/2 bag = 375 g) spaghetti frozen veggies
3/4 cup (3/4 cup = 127 g) frozen sweet corn
1 tbsp (1 tbsp = 15 ml) maple flakes
1/2 tsp (1/2 tsp = 2.5 ml) dried cilantro
2 tsp (2 tsp = 10 ml) ground cumin
1/2 tsp (1/2 tsp = 2.5 ml) paprika
to taste salt

Here’s comforting go-to meal to make in no time. Simple, so good. This no-brainer vegetarian chili with quinoa is ready in about twenty minutes and makes super leftovers. You don’t have to be a great chef: you use frozen vegetables and canned legumes!

Quinoa is not a starch

Quinoa is a grain! It is also naturally gluten-free. This makes it a delicious and convenient food. I always have them in the pantry to make salads or hot dishes. In particular, it can be used in all recipes that usually contain rice or couscous. Pasta can also be swapped for quinoa in several recipes. It is nutritious and satisfying. A grain that is worth gold and yet affordable.

A vegan recipe

This recipe does not contain dairy or animal products. It is naturally vegan. And frankly, it’s excellent as it is! That’s a good thing, isn’t it?

In a large pot, heat over medium-high heat and fry frozen spaghetti vegetables (not corn) for about 5 minutes. If desired, add a little vegetable oil.

Add water and tomato sauce or crushed tomatoes. Mix gently.

Incorporate cumin, parika, coriander (cilantro) and maple flakes (or other sugar). Salt to taste.

Rinse and drain red beans. Add them to the pot.

Add quinoa. Mix gently.

Bring to a boil, then reduce heat to medium and cook for 20 minutes or until quinoa is cooked and liquid reduces by a third (do not cover).
Add frozen corn a few minutes before the end of cooking to thaw.
Stir regularly, but gently, to prevent the mixture from sticking to the bottom of the pot.
