Ingredients

Adjust Servings:
2 cups aragula
1/2 tray (1/2 tray = 115 g) sliced ​​mushrooms
1/4 (1/4 = 40 g) onion
1/2 cup (1/2 cup = 125 ml) canned white beans
1 tbsp (1 tbsp = 15 ml) light mayonnaise or vegan
1/2 tea (2.5 ml) sumac
to taste sea salt
to taste pepper
A little vegetable oil cooking spray

Do you like warm salads? Personally, I love to lay grilled vegetables on a bed of greenery and toss the whole thing with a creamy sauce! This is what I offer with this very simple recipe that I improvised and have been addicted to ever since.

The secret? Sumac! An oriental spice that I love that is taken from a plant… of poison ivy! Don’t worry, this spice is safe! It has a beautiful vibrant red color. You will find it at any grocery store.

What greens?

Preferably use a mixture high in flavor such as kale and aragula.

A super nutritious salad

Vegan version

For a vegan version, just use a vegan mayonnaise.

Steps

Clean and slice mushrooms. Peel and slice the onion.

Coat the white beans with sumac in a small bowl.

On a non-stick hot plate or in a pan, spray a little vegetable oil. Heat to medium-high intensity. Roast onions, white beans and mushrooms for about 5 minutes.

Mix the mayonnaise and the green mixture. Salt, pepper and twist.

Place the grilled vegetables and beans on the creamy salad bed and serve warm.
