Whether you’re vegetarian, vegan or a healthy foodie, tempeh is worth the try! This plantbased protein is very nutritious and adds one more ingredient to your vegan inventory! A good way to discover tempeh is this tempeh bacon, a vegan, high-protein and convenient bacon!
What is tempeh?
Tempeh is a product derived from soybeans. Unlike tofu, which is the result of a deeper transformation of soybeans, tempeh is less processed. It sells in bulk, just like tofu, but you can see the texture of the soybeans (process does not remove the envelope and fiber as is the case with tofu). The taste of tempeh is more pronounced than that of tofu, a bit bitter. Thus, it is important to prepare it properly to give it flavor.
In summary, tofu is a made of unfermented condensed soy milk while tempeh is made from fermented soybeans.
What is liquid smoke?
Liquid smoke is now quite easily found in most supermarkets, often in the organic food aisle. A few drops give a very pronounced taste, be vigilant! This ingredient is fundamental to the recipe. See a preview of the bottle in the photo!
Steps
1

|
PRE-COOKING TEMPEHAlthough optional, I find this step important. This involves boiling the tempeh block for 10 minutes. It softens its taste. |
2
Done
|
MARINADEIn a small container fitting the length of your tempeh slices, combine oil, maple syrup, liquid smoke and smoked paprika. Mix well. Put aside. |
3
Done
|
BAKINGSlice the tempeh block into 15 thin slices. Handle with care, they will be delicate. |
4
Done
|
Spray vegetable oil on a non-stick heating plate or in a non-stick skillet over medium-high heat. |
5
Done
|
Dip each slice in the marinade, on one side and then on the other. Place them one by one on the hot surface. |
6
Done
|
Cook each slice for about 3 minutes on each side. Do not turn over more than once, as the slices are delicate. |
7
Done
|
Stop cooking when the slices are golden on each side. Serve with eggs, scrambled tofu, vegan Caesar salad or in a sandwich! |
