Ingredients

1/4 cup (1/4 cup = 40 g) cashew nuts

1 tsp (1 tsp = 5 ml) lemon zest

1 square (1 square = 10 g) dark chocolateor lime flavoroured dark chocolate as suggested

1/2 tbsp (1/2 tbsp = 7.5 ml) coconut oil

1 tbsp (1 tbsp = 12 g) maple sugaror other dry natural sugar (avoid liquid)

These energy balls with cashews, dark chocolate and lemon are energizing! The little kick of the zest is really interesting when it is well dosed. I like to have energy balls in the freezer, just take them out in the morning and put them in the lunch box. A satiating delight as we like them, it’s like dessert in my opinion!
If you’re a fan of lemony delights, this recipe is for you! Don’t be afraid of good fats: this recipe contains fat and that’s a good thing! Nuts are excellent for your health. 7 grams of good fat and a tiny 3 grams of sugars per ball, it’s perfect!
Lime chocolate to push the note
You can use the chocolate of your choice in this recipe, but I like to use the lime flavoured dark chocolate made by Lindt. It adds even more flavour to the energy balls.
Gluten-free, dairy-free energy balls
These energy balls are gluten-free because they do not contain flour or grains and are vegan because they don’t require dairy products. They are obviously without cooking, that’s the beauty of the energy balls: a few minutes and you’re done!

A treat of less than 100 calories
Let’s face it, many of us want to live a balanced life. Eat healthy, aim for a healthy weight or weight loss, reduce your sugar intake… all of these goals are compatible with eating dessert and satisfying snacks. It’s so great that these energy balls are filling, delicious AND that they only contain 89 calories each!

In an electric blender or coffee grinder, reduce cashew nuts to a fine powder. |

Melt coconut oil in the microwave for 10 to 15 seconds. Allow to cool otherwise it will melt the chocolate when blending. |

Chop the dark chocolate with a knife to form small pieces. |

Rinse and dry one lemon. It is best to use organic lemons to zest. |

In a bowl, combine cashew powder, maple sugar, melted coconut oil, lemon zest and chocolate. |

Form 4 small balls with your hands and refrigerate for at least 15 minutes to firm. Enjoy! |
