Many of my favorite recipes were created accidentally! You will notice it is the case with this vegan meatballs and cheeseballs recipe: you will get an incredible bowl in minutes. If you use my homemade vegan ricotta recipe, then allow a little more time, but then again, it’s super simple to make.

I say yes to some commercial products. Especially when it comes to local products. Just read the ingredient list and nutrition sheets to make sure you’re eating an interesting and healthy product. You’ll get used to it! This recipe features Fontaine Santé’s végé-paté. I always have some in the fridge!

Place the spinach bed in a microwave-safe bowl. I use fresh spinach. |

With your hands, form mini vegan ricotta balls about 2 centimetres in diameter. |

MicrowaveHeat in the microwave for 2 minutes. Make sure the balls and the sauce are hot and the spinach has soften. |

OvenThen place the bowl on the top rack in the oven and broil. Bake for 2 to 3 minutes or until balls are golden brown. Enjoy! |
